Onion and Beef Stew
1-1/4 lbs. stew beef, cut into 1-inch pieces
1/4 c. olive oil
2 c. onions, sliced (or 2 cups small pearl onions, peeled)
2 clv. garlic, minced
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. allspice
1/2 tsp. sugar
1 cinnamon stick (2-inch)
1-1/3 c. dry red wine
8 oz. tomato sauce
Brown meat in hot oil in heavy skillet; remove from pan.
Brown onion and garlic. Add other ingredients; stir well.
Add meat; bring to boil. Reduce heat to simmer; cover.
Cook, stirring occasionally, 2 hours or until meat is very
tender.
Yield 4 servings.

Irish Cream Cheesecake
Crust:
2 cups graham cracker crumbs
1/2 cup sugar
1/2 cup butter, melted
Note: The book just says 1/2 butter, I deduced cup
from other recipies
Mix and pat into 9" springform pan. Place in freezer.
Filling:
2 lbs cream cheese
1 cup sugar
1 tsp vanilla
3/4 cup Irish Cream
3 eggs
Beat cream cheese, sugar, and vanilla until smooth. Add Irish
cream, blend well. Add eggs one at a time, blending well
between each.
Put filling in pan and bake 40 minutes at 350F.
Topping:
1 cup sour cream
1/4 cup Irish cream
1/4 cup sugar
Wisk together, spread over top of cheesecake. Return to oven
for 5 minutes

Date Sandwich Cookies
See last year's cookie recipes.
Dark Pfeffernusse
1/2 cup shortening (Crisco)
3-1/3 cups flour
3/4 cup brown sugar, packed
1/2 tsp. soda
1 egg
1/4 tsp. salt
1/2 cup molasses
1/2 tsp. cinnamon
3 drops anise oil
1/2 tsp. clove
1 Tbs. hot water
Note: If you use self rising flour, omit soda
and salt.
Preheat oven to 350 degrees F.
Mix shortening, sugar, egg, molasses and anise. Measure
flour by dipping or sifting. Blend dry ingredients and mix
gradually into wet ingredients with hands and knead dough
until stiff enough to shape. Refrigerate until firm. Mold
into snakes (about as thick as your thumb) and cut into 1/2
inch pieces. Place on greased baking sheet and bake for 12
minutes or until gold on bottom. Makes 8 dozen.
For soft cookies, store in sealed container with slice of
apple.
